Salad for dinner? Really? I know. I thought the same thing a few years ago. That is... until a friend showed me the way. Life has never been the same since. I've almost always got salad fixins in the fridge now. Even on my laziest and most apathetic of days, I can still somehow muster up the motivation to make this salad. While sometimes I get a little carried away and end up piling whatever leftovers are in the fridge right on top of a pile of lettuce, most of the time the result is delicious.
What is the secret, you may ask? The answer is threefold. One: noodles. Two: tofu. Three: great dressing. An abundant mount of leafy greens and fresh vegetables, of course, is implied. These provide the fiber, vitamins and phytonutrients that are so important to staying healthy. Then I like to add noodles such as soba or rice noodles, cooked and rinsed in cold water. Noodles act as the starchy part of the meal, giving energy to your brain, muscles and organs. And lastly, the tofu boosts up the protein, helping you to feel full and satisfied at the end of the meal.
Ready to try it on your own? Here's my recipe!
1/4 head red leave lettuce, chopped
1/4 cup red cabbage, thinly sliced
1/4 cup yellow bell pepper, diced
1/4 cup cucumber, diced
Tofu and Noodle Ingredients:
3 oz tofu
2 T tamari
1 bundle soba or rice noodles
1/4 cup water
1/4 cup peanut butter
1 T tamari
1 t sriracha
1. Head up a nonstick pan with 1 T of tamari and place the tofu in the pan. Pour the other 1T of tamari on top of the tofu.
2. Go ahead and chop all the vegetables, making sure to flip the tofu when the bottom side is crisp and brown.
3. Start a pot of water on the stove and add your noodles once the water boils. Check on the noodles ever few minutes. When they are tender, drain them in a colander and rinse with cold water.
4. When noodles and tofu are done, place them on top of the salad.
5. Place all dressing ingredients in a blender. Blend for about 20 seconds until desired consistency is reached. If it is too thin, add more peanut butter. Too thick, add more water.
6. Pour dressing on top of salad and enjoy!
OR! Make a taco salad instead. Use a bean burger instead of tofu, salsa instead of peanut dressing and sprinkle crumbled tortillas on top. The possibilities are endless!
